Make it look easy...

There are some recipes you gravitate towards because they're simple and delicious and because they're easy to make.

In order of difficulty then, here are the following:

Alternative to Popcorn or Chips Mix

Ingredients:
Raisins
Walnuts
Cheerios

1. Put raisins in a bowl or preferably a container with lid.
2. Hand crumble walnuts and add to raisins.
3. Add Cheerios.
4. Cover lid, shake (or hand mix) and munch away....

Carrot Slaw a la Alton Brown:

Ingredients:
-2 lbs carrots
-1/2 cup mayonnaise
-pinch of salt
-1/3 cup sugar
-1/2 cup crushed pineapple (drained thoroughly)
-1/2 cup raisins
-2 teaspoons curry powder
-1 teaspoon garlic, minced
-pinch celery or caraway seeds

1. Wash and peel carrots into noodle width strips using vegetable peeler.
2. In a container with a lid mix together mayo, salt, sugar, pineapple, raisins, powder, garlic and seeds.
3. Add carrots, toss to combine.

***Note: I made the slaw only with 1 or 2 carrots, a teaspoon or two of mayo and sugar, the tiniest pinch of salt. It's delicious as is on it's own, or with a few raisins tossed in...and good for the eyes!!!

ATK's Classic Tuna Salad

Ingredients:
-2 (6 oz) cans solid white tuna in water (Starkist recommended)
-2 tablespoons juice from lemon
-1/2 teaspoon salt
-1/4 teaspoon ground black pepper
-1 small celery rib minced (about 1/4 cup)
-2 tablespoons minced red onion
-2 tablespoons minced dill or sweet pickle
-1/2 small garlic clove, minced
-2 tablespoons minced fresh parsley leaves
-1/2 cup mayonnaise
-1/4 teaspoon Dijon mustard

1. Drain tuna and shred with fingers till there are no lumps and the texture is fine and even.

2. Transfer tuna into a medium bowl and mix in juice, salt, pepper, celery, onion, dill/pickle, garlic, parsley until evenly blended.

3. Fold in mayo and dijon mustard until tuna is evenly moistened.

***Note: Good with saltine crackers or with pasta or as is. Try to use red onions, they give a sweeter taste to the salad, white or yellow onions are too sharp and harsh in flavor.
