Make the most of your food! Left over bell pepper and ground meat used for meatloaf turned into a new meal.


Season ground meat with salt, pepper and any other flavoring(s) of choice. Cut bell pepper into quarters and fill with ground meat. Heat EVOO in non-stick skillet and add bell peppers. Cook for 2-5 minutes, or until brown; flip and repeat on the other side.

Add a bit of flour onto the stuffed peppers to prevent ground meat from crumbling and falling off the peppers. Plated with brown rice (red actually) and xue li hong (translated to snow leaves red), a common Chinese mustard green, part of the broccoli family.
