Make the most of your food! Left over bell pepper and ground meat used for meatloaf turned into a new meal.
Season ground meat with salt, pepper and any other flavoring(s) of choice. Cut bell pepper into quarters and fill with ground meat. Heat EVOO in non-stick skillet and add bell peppers. Cook for 2-5 minutes, or until brown; flip and repeat on the other side.
Add a bit of flour onto the stuffed peppers to prevent ground meat from crumbling and falling off the peppers.
